In celebration of the French Macaroon
Macaroons are ethereal, meringue-like cookie sandwiches which are light and pretty, variously flavoured and colourful. The French Macaroon is a distinctive, sophisticated sweet treat, and a favourite of pastry lovers the world over. The delicate meringue biscuits are made using finely ground almonds and icing sugar, rendering a chewy centre and a light crispy exterior. The meringues are sandwiched together with a variety of fillings including ganache based fillings, custards, creams, caramels and jams.
