Tarts

Fig, thyme and burnt-butter tart

I found this recipe in a 2009 House and Leisure magazine. This recipe is a great find and I made it for the first time this past Saturday for my younger sister's Wedding Shower. The tart is given a rather unconventional twist with the thyme and there are chopped walnuts in the pastry. It is simply a delight to eat.

Zesty lemon tart

I have made this tart many, many times. The recipe comes from my all time favourite recipe book 'Marie Claire Flavours' by Donna Hay. I have cooked my way through this book and have not encountered a single recipe that does not work, nor one that is not entirely delicious. This lemon tart is a favourite of a very special lady who happens to be my ex-boss. The tart made numerous appearances at staff meetings and staff birthdays. The filling is zesty and creamy which sets off the crispy pastry to perfection. When in doubt, make a lemon tart because everybody loves a lemon tart!
